A great idea doesn't need to be complicated, in fact, the simpler the better. Pantumaca means bread with tomato, more precisely, rubbed tomato. Pretty much any sandwich or tapas in Catalonia are rubbed with a base of tomato and olive oil. In rustic restaurants you are more usually served with a slice of toasted country bred with a plain tomato, garlic and olive oil to accompany your meal so you can do it your own. The origin of pantumaca is from Catalonia. The ancient origin of having bread with oil comes from the ancient Greece although the first appearance of tomato in Spanish cuisine is from XVIII and the first documentation of bread and tomato is from mid 1800. No matter how old this tradition is we love this genius idea which is now part of the mediterranean diet. If you come to Barcelona, Sitges or anywhere else in Catalonia your tapas will be usually served with pantumaca. Bon apetit!
